Thought I'd sneak this in while JessicaTam is distracted :).

I love parsnips. Roasted with other roast root veggies with a side of beef; steamed to accompany corned beef and mashed potatoes with white parsley sauce, or even pureed as a base for confit duck as we had at Rockford yesterday :D.

Yum, yum and yum.

Just thought I'd put it out there.
 
I shall support your appreciation! Won't cook at home but happily look for on a menu.

Artichoke are my newer reveleation.
 
Love parsnips and love the price of them here in the UK - going to be a lot of parsnips eaten in the next six months

That meal must also have horseradish to go with the beef. Also a little sprinkle of sea salt on the parsnips

Hope your post doesn't get the snip when JessicaTam recovers from last nights hangover.

Not my favourite vegetable and can't remember the last time I saw one.

Parsnip for dessert! Rockford lunch, dessert was a Berliner filled with parsnip cream, with Cane Cut surbayon.

Young parsnip and just the outer bit, and frankly not very much in it. So yes, a regular sweet Berliner.
