You can be a volunteer at the airport. Brisbane Airport has some volunteer staff to help tourists to find the locations. I am not sure whether Melbourne airport has the volunteer staff or not.
It depends on what the airlines offer for the Y premium such as different meals from Y and placed Y+ seats at the front of the plane (not on the wings) such as Emirates' Y plus in A380s.

I have looked at the flightpaths between Brisbane and Sydney. I have flown many times and always fly over the land (NSW to QLD). However, I was suprised to see most plane flew over the sea lately (fly over the Tasman Sea) until it reached SYD/BNE airport.
