Usually day of the flight from past experience. I got waitlisted for an upgrade to Business with points. Flight was at 3:05; got off the waitlist (I guess after people had paid for their upgrades) at 10:30. They want to make as much money as possible from the seat.

I've only done SYD-PER but assuming it's the same thing, one main meal, however you get more food compared to if you were flying SYD-MEL. You can ask for tea, coffee and snacks from The Pantry on demand.
