No actual experience with this but that was my understanding also when I booked my SYD-ZRH flights back in November. No tests required to leave Aus, no tests required to board EK flights, no testing required for DXB transit, and no testing required for entry to Switzerland from Australia.

I managed to book SYD-DXB-ZRH in F in late March, although there was also availability for other European cities such as FRA. Hoping that SYD-DXB will be an A380 as their flight schedules are only updated until around late March and anything after that is still showing up as a 777.

an alternative is to leave from somewhere other than ZRH as that is adding extra miles, or buying your own flight to MAD. e.g MXP-MAD-EZE is 135 miles less than leaving from ZRH and will bring you under 35k
