There are a couple of 'stopover' threads about, but things to do might include:

Burj area:
* Go up the Burj Kahlifa (day and evening or dawn if you feel extravagant)
* Mall of Dubai (has an aquarium within it)
* Watch the fountain display outside the mall
* Have a avocado smoothie at one of the shops near the Burj Kahlifa entrance/exit
* There is a place you can ski indoors, if that's your thing

Old town area:
* The Gold souq
* The old fort (museum)
* A ride across Dubai creek on a dhow

* Burj al Arab (not sure if you can get in or not)

Haven't done it, but people rave about the day trips into the desert. I'm sure some-one will say more here.

Thanks, I did find some stopover info after I posted. This is a good summary thanks. Will give skiing a miss .... might find a jewellery shop instead. Less risky!?
 
As Rooflyer said. Burj Khalifa. The mall and fountains. Some fabulous cafes inside. See the aquarium.

You can get into Burj al Arab - we did this for afternoon tea but you need to book and it is expensive. Then you can go out the front of Al Arab and ask one of the drivers to take you over to Jumeirah Madinat (another souk) where they will stop for you to take this photo:

He also took one of us in front which is lovely.

When you get to Madinat the photo ops are wonderful also:

We also loved the Creek and the spice and gold souks

We also did the Heritage Dinner safari which was fabulous

Going back again in April with another AFF'er and will probably repeat. Maybe not the safari.

It is perfectly safe to purchase gold at the Gold Souk as all vendors are accredited by the Government.
