Best use of Amex points for travel?

To all the Points experts who are well travelled out there - We have 1M points (across 2 adults), looking at a Australia East Coast to New York trip, with stop over in Europe on the way there and Asia on the way back (maybe via Hawaii as an alternate plan instead of Asia??) - What is going to be the best use of the points to travel business class air and in what hotel chain that is 4 star or better? I also have a 190K points sitting in KrisFlyer.
