If you end up in hospital due to Covid-19 internationally. Is it blanket no coverage? or dependent on vaccination status? Are children covered ? As much info as possible would be great. Thinking about future travel destinations.

You would be better off asking the insurers, but i am fairly sure, if you are sick your medical is covered, whether its covid, the black plague or leprosy.

Its other covid related stuff thats not covered, like cancelled flights, stuck in woop woop, lost bookings etc.

Depends on the policy. Some travel insurance covers covid medical treatment and some does not. Even those that provide cover likely have limits and underwriting restrictions that could exclude claims in some situations.
