If I've purchased a business class ticket with Virgin Australia with an itinerary that includes a VA flight number from HNL to SYD which is fact operated by Hawaiian Airlines, do I still get the 100% bonus miles being a Platinum Velocity member?

If it were a straight forward HA flight number I know I wouldn't.

Yes you do according to the velocity website which states ;

When travelling on eligible Virgin Australia fares and flights with a Virgin Australia (VA or DJ) flight number, including codeshare services operated by our international airline partners, you can earn Points on your ticket. Silver, Gold and Platinum members can earn an additional Points bonus.

Also remember that the earn rate is per mile not per dollar of the fare. I have recently done what you are planning above and got the full 100% bonus on top of the base.
