Flight on anniversary date

If I fly on my anniversary date in Europe (the next Qantas year in Australia), will the SCs and points go to the new year or the old year?

The year ends at the end of the month you joined QFF, in my case 31st July.

If I take a flight that departs on 31st July, it is credited to the current (old) year, even if it arrives on 1st August.

The flight date is based on scheduled departure time, not whatever time it might be in some other timezone.
