i'm looking at booking a freedom fare to get me from SYD TO MEL after an EK flight from BKK.

Thinking to book the flight in the afternoon in case my flight is delayed

Would I be able to get an earlier flight if I arrive on time without paying a fee?

I'll have gold status as well from the coles mastercard offer.

Yes you should be able to 'Fly Ahead' on a Freedom fare and as a Velocity (Explore) Gold.

If you have plenty of Velocity points and don't mind burning a few, what you could also do is purchase your Freedom fare on a flight that also has Business Reward seats. Then upgrade for 4,900 points.

As per the published Velocity Gold benefits, you can request an earlier flight for free on anything except a Getaway fare. This includes Reward bookings.
