I've just gifted Platinum Status to my daughter.

She has a couple of bookings with VA in the system. My question is, in order to have the bookings updated tp reflect her new status, does she simply have to ask VA to remove her FF number from the booking and then re-add it to pick up the change?

I don't know why you would need to bother. Assuming your daughter's status has reflected on the system and she has her new card all other issues shouldn't be an issue. Possibly seat allocation may not reflect her new status if she has already done allocation but I am sure a quick call to the Platinum desk would fix this.

Yes, just call them and tell them that your itinerary isn't showing the correct baggage allowance and they will remove and re-enter the ff number.
 
Under the old navitaire one would need to call.

However since SABRE, it appears to be more.
