Gifting the Amex Velocity Platinum free flight?

I've just been approved for this card - hopefully Burmans will receive the referrer link points :)

Does anyone know if it is possible to have the free flight issued in my wife's name? I need eligible sectors more than I need the free flight at the moment.

Not a problem. You can gift it to pretty anyone ..... But I don't think you can change the name of the ticket once it is issued.
 
I booked mine for my wife (who has a different surname) without any question.

Do sectors move across via family pooling? I had it in my mind that SC's and FF points do, but not sectors - happy to be corrected as I could use some from my Mrs as well.

No. With pooling etc, eligible sectors flown is the one ace card VA have to ensure people who earn status have actually had BIS flights.
