I stayed there around 5 years ago, it was nice but a bit out of the way, that may have changed.
 
I have. Get a club room. Its a great hotel in a location thats convenient to the MTR subway. Club rooms are great and the club access provides breakfast, all day food & drinks plus coughtails after 5 plus outstanding service from dedicated club floor staff, free wi-fi plus computers in the club.
Amazing views of Victoria Harbour.

Its not in the heart of HKG but only a very short MTR trip. Get an octopus card.

I stayed 5 nights before Christmas with Mrs Batesy and made a great choice based on price and Tripadvisor reviews.

Breakfast was good and there is a great range of restaurants both in the hotel & nearby.
 
The problem is that we wont be spending much time in the hotel. But I do want to have dinner there on my GF's Birthday (she doesnt know about it yet). So the "club" wont be for us.

Looking to spend under $1500 for the 7 day stay on hotel room (inc breakfast).
 
Absolutely loved this hotel when I stayed for Valentine's day last year - it was around $140AUD a night for a corner club suite.

Recommend the Le 188Degree restaurant/lounge on the top floor also which has awesome views of the city at night.

It is located a little out of the way but taxis are plentiful (and cheap) and the MTR is only a 6 min walk.

Depending on your dates you should easily be able to meet your budget.
 
Horbour Grand Hong Kong

There are 2 Harbour Grand hotels, one in Kowloon and the other on HK island right by Fortress Hill MTR, near Causeway Bay area.

Seems most are referring to HK island one. Stayed there last year, top floor bar/restaurant had amazing views of the harbour.

When are you intending to go, as rates vary each day it can be hard to give you alternatives without dates, I had a quick look and the Intercontinental Family And Friends program gives the following options for a 7 day stay late May:

Holiday Inn Express Causeway Bay AUD$100 a night (includes BF)
Holiday Inn Golden Mile $120 a night

If you want a good location and some luxury the IC Grand Stamford may be an option:
