Is it possible? No issue with booking Mel/Sin via Virgin's site, but can't manage to it the other way around...and there is no country change available

Looking at the price they are charging one way mel - sin it probably is not worth booking with them anyway.

Cheaper alternatives with better seating could be:

Book Jetstar oneway on the Australian expedia site for less than $200 and then try for an on departure upgrade.

Book scoot business to Sydney for less than $400 AU and then get a domestic flight to Melbourne.

Expedia, or call them. I did this for a HKT-SYD Business fare, I have no idea why they don't offer that functionality. The price will be completely different than MEL-SIN.
