I booked CX melbourne to london (economy saver), a week later, a change of plan, I need to go to Paris instead. because the fare mel-cdg is $50 cheaper than my original ticket, CX won't refund without charging me cancellation fee. only way to avoid the cancellation fee ($500AUD) is to book another flight ticket with the same or higher value of the original ticket.

If I book a economy flex (which has no cancellation fee) to get my original ticket refund fully, then wait for a while, get that economy flex ticket refund. Will CX allow me to do that?

No, that will not work; the original nonrefundable amount will remain non refundable

You may be just best off booking a flight (if not planning to spend any time in UK) or taking Eurostar otherwise for London-Paris
