Is it worth waiting for possible EK First award seats to open or book elsewhere

After burning 910K points on 2x OW RTW trip in First last year, and earning less points in the last 12 months. I am down to about 700k Amex points.
Transferring to EK at 3:1 seems wasteful, and it appears more logical to transfer to QF and book EK with QF.
I currently have 2x QF - J seats ADL-SYD followed by 2x SQ adjoining suites seats on the A380 to SIN and then SQ - J seats to MLE booked for late November for our Honeymoon.
The question is, if possible we would like to have a few days in Dubai on the way home, and Experience EK First class. While we have enough points for award flights, They usually do not become available until a week or two out, this is obviously a risk, as we would be on our honeymoon without a return flight confirmed.
Our other option is to transfer to SQ now, who have saver award availability in J from MLE-SIN-ADL, which would save time, however it means we will miss out on going back to Dubai and miss out on the possibility of EK First. (once Amex points are transferred to either QF or SQ there's no going back) so by not confirming SQ we would be gambling for EK First, or Business.

So the question is: What is usual for EK availability around Early-Mid December from DXB to anywhere in Aus?
And has anyone taken this gamble, did it work out, was it worth it?

(we don't mind PER/MEL/SYD/BNE) ADL would be nice, but the 777-200 they are scheduled to start flying doesn't have F. (also we would prefer the A380 with shower and bar, not the 777-300ER to MEL via SIN or the 777-300ER to PER)
(My Fiancé is very risk adverse, and wants the SQ option, because while she loves First, she can't stand Economy, especially for 10+ hrs)

EDIT: There is also saver award availability for us to go with EY in business, haven't flown EY either, how does it compare to EK or SQ business?
EDIT: Transferring to QF for EK flights in F or J also allows me to retain QF PC+ for next year (a minor bonus really)

I wouldn't gamble in this scenario. Lock in the SQ option while it's available. Being December, you'll find the final legs inbound to Australia get snapped up quickly. In any event, Singapore is a nicer stopover than Dubai.

Definitely dont get on a plane to the Maldives without your onward bookings confirmed.

You need to be able to show proof of onward travel

It's a gamble.

We wanted EK F tickets this year but there was only ever one available... that is, until the other week, however by then we'd already booked another route and it would have been too complicated to change things now.
 
I would say it also depends on the type of travellers you are.

If for example you're ok to be booked 1 in F and 1 in J (this is where skyward is better than QF as you can upgrade the ticket) then that's one option too. You change to F if more becomes available or ask for upgrade. If not you fly thr J + F.
