Well, you could always write them a letter.
Was the upgrade proactively offered to you at check-in? I would've asked about the fact you had pre-paid for meals straight up.
Another way to take it is that your Star Class upgrade was simply $56 more expensive than you were offered. Depending on how much you paid for your initial fare, you would've probably still snagged a "good deal" for Star Class anyway.
In general, in many cases, when a booking changes and/or is cancelled, one should check with airlines about what happens to any auxiliary charges paid, e.g. extra baggage, extra legroom, meals, etc..
