By using ITA Matrix I found the above J class fare on PR's refurbished, flat bed A330s (A$1476 return including taxes) for a SYD departure in late August 2017 and return from MNL in early September 2017.

It's not as good as the previous A$1200 MEL or SYD - BKK, HND or TPE plus others J return (which was not available to MNL - only 'beyond') but it is still a substantial discount on the usual A$2300 or so J return SYD or MEL to MNL.

Probably because PR is the only nonstop airline from MEL to Philippines (and only to MNL, not CEB), the J fares there are higher (not A$1476 return - more like A$2100 return) if my searches are any guide.

How do u out convert the ITA matrix fares into a real ticket?

With one fare (not this one), I did it the low tech way: I printed a copy of the detailed fare codes (the 'box' showing fare construction and the code) and took it to my travel agent. He found the fare (it was still available: I didn't dilly-dally) and even took a few dollars from the ITA Matrix fare.

Result: one pleased future passenger.
