So I Thought Jetstar was the LCC

Just booked Mel - Beijing on Qantas total was $1120.00 per person departing 13 July returning 21 July Yet Jetstar flight same days with the bundle was over $1300.00

Qantas the new LCC

Pretty common that the LCC are more expensive than the legacy carriers once you add in all (or even just some!) of the extras. They are more designed for people who 1/ don't use the extras or 2/ don't do the research!

Wait till you fly ex-SIN. These days, QF in Y is consistently cheaper than JQ's no-bundle prices. But then, my colleagues here are willing to fly on BA or go via KUL on MH rather than fly on QF... Once, a local was surprised to hear that I was a QFF SG, and asked "you still fly on Qantas?!" as he couldn't comprehend why anybody would still do that. If my peers' attitudes are anything to go by, the Qantas name is equivalent to junk status in SIN.
