I'll be calling over the weekend but am wondering if anyone knows if I can remove one passenger from a rewards booking or If I have to cancel the entire booking and start again?
There is still rewards availability for my flight but It would just be easier for me if I could remove the one passenger.
I used points plus pay.

Not sure if you mean moving a passenger out of the booking into their own booking or canceling their ticket.
Points plus pay is not a rewards booking.

You should be able to carve out passengers from a booking and put them into their own PNR whatever the type of booking - reward, points plus pay or purely $$$ . They can still fly under a different booking.
Cancellation is also possible but that passenger will be subject to the cancellation policy.

The only catch is that the passenger (assuming an adult) to be moved or cancelled needs to contact the airline themselves.

I did this on a QFF booking late last year. Easily done.

Yes, you do this by calling them.
