+1 one for Pearl. (It's best on a clear day/evening.)Pearl on the Peak - get a corner table overlooking Victoria Harbour.
Can be a little coughbersome to get up the Peak and back but it's worth it. Fantastic food, service and views.
My pick would be Aqua Restaurant on the top floor of 1 Peking Road, TST.

Beautiful couple booths along the double storey curved glass window with fantastic view of the harbour and HK Island. Menu has a mix of Italian (Roma) & Japanese (Tokyo). There is also a funky bar upstairs (Spirit) which you can move up to after dinner.

I second this recommendation - Hutong offers a great setting, great views, great food, etc, etc.....check out the website.
I can also recommend the Aqua Luna junk harbour cruise - go in the evening to see the light show.
If you want to mix it up a little, China Club is a good choice - old world charm, no views, show with dinner - not really romantic but I'm assuming that you will be in HK for more than one night - if not go with Hutong.
The China Club is definitely worth checking out at another time. David Tsang's design evokes 1930's Shanghai and the food is excellent - you may be able to wrangle a table through the concierge at your hotel.
I thought of her and I on a boat just us 2 sailing for 3 hours with a crew but that costs $1500 for the 3 hours.

Ah. How strict? - in terms of eating in a restaurant that uses utensils that may have contacted with meat in the past eg a wok.oh and I forgot, she is vegetarian
