I was recently selecting seats on QF5 SIN-FRA at T-87.58 (see bottom-right seatmap in pic below) and the whole plane had opened up. Can anyone explain why I didn't have to wait for T-80?

The T-80 arises when profile preferences take effect as a result of the flight moving into the departure control system window. However, T-80 has normally been talked about on this board in the context of domestic flights.

International flights do go through a difference process as they approach departure, so this may account for the difference in timing.

No more seats opened up at T-80. Is there any easy way to tell if a given flight is the second leg of another flight?
T-80 means nothing, QF yield can do allocations T-200 if they feel like it. I have seen international sectors open up days in advance.
Second leg of another flight? Anthing via SIN or BKK outbound ;)

While they can do T-200, there is an automated process at around 80 hours before domestic flights that enacts the Altea software to preallocate seating for any remaining seats. After the invocation of said process there is a tendency for better seats to open up for those with status.
