I am flying mel-syd Friday 12noon

Syd-Mel Monday 8am

I am in a full econ fare i beleive so only 5,000 points each way to upgrade. However is the 767 the one with the 'fake' business class? Or is it the millennium chair?

767 has both millenium which is just a slightly bigger seat and dreamtime which is the international product with lots more space.

Full Eco -> Business upgrade = 5k points correctly, although an upgrade inventory seat needs to be available for you to get one. Or, you can try your luck at the Qantas Club (On Departure Upgrade).

The 767 either have Millennium seating (domestic configuration) or Dreamtime seating (international configuration). After you successfully upgrade, when you select your seat, if you get a 1-2-2 configuration it will be Dreamtime; if it's 2-2-2 it's Millennium.

737-800 series have Millennium, too. The "fake" business class you refer to must be the 737-400 series, which have convertible Business (a la DJ Premium Economy style). Just pray you don't get swapped out for a 737-400 and you'll be fine.

dont think I have ever gotten a 734 on syd-mel,
syd-bne yes and mel-adl yes, but never syd-mel though im sure it must happen

The OP may be referring to the two A332's that have the PE inspired J seats?
