We are travelling to US (for the first time) in July 2016. Many hotels offer AAA room discounts. Is there a way to join using an Australia address?

You will find by signing up to the AANT (RAC in other states) that you will have reciprocal access to the AAA room discount.

I am sure someone can confirm from the NT, but from WA the club code which you will need to enter for the discount is on your membership card.

Confirmed. I don't have my AANT card with me, so can't give you the three digit code. However, on last year's trip to the US I entered the code when making bookings online and none of the hotels ever asked to see the actual membership card.

Yes. The Hilton site is a little buggy, so doesn't accept all cards. Just use any 3 digit code and bring your card along.
 
The number on my RACV card doesn't seem to cut it, but a search of this forum reveals other number(s) you can use. Jut be sure to take the relevant RACx card along as some hotels will need to sight it (on the RACV card it is a tiny logo on back bottom RH corner).
 
I have both AAA and RACWA. The three digit number is 397 on the back of the RAC card.
What we found was some Hilton /Embassy Suites did not always work with that 3 digit code so we joined AAA. I have scored good deals with discounts and the towing of a hire car would be helpful. We drove 12000 miles in 30 days in an unlimited mileage hire car and that was what convinced me to join AAA. Their trip planning was really helpful.
