flying IAH to SYD to WLG

Flight from Syd to wLG has changed to a 12 hour layover in Sydney.

Will my bags connect directly to WLG or can I pick them up in Sydney.

Original plan was to spend a night in Wellington but now it’s looking at less than 13 hours till my return flight to Melbourne the next day.

At this point I rather just stay in sydney.

Can’t reissue ticket I know but could I just skip the last leg due to their rescheduling?

Due to the ever changing Air NZ schedule?
With IAH-SYD-WLG bags will be interlined and you would stay SYD air side, with no AU immigration - customs. As a guess UA will not short check bags as AU is not the final destination on your ticket.
Boarding the flight UA should check you are admissible to NZ and transit AU (not check admissible to AU)
To enter AU will need a visa depending on your passport. I note from a post (2013) you were SYD based.
If this is a return ticket, skipping or no showing any segment will result in all the following flights being auto cancelled.
Ask UA to change the ticket.
