I can buy a business class ticket to Amsterdam via KLM, but three legs are flown on Etihad metal.

is there any way that I can get my Velocity frequent flyer number on the ticket so that I get status credits?

I tried this once and was able to successfully add my Velocity number to the Etihad ticket but I did not earn anything.

I didn't have VA status at the time so not sure if it would have worked for that or not.

It was a very poor experience honestly, mass confusion at AUH about what lounge I could use (I had Delta status), and seat assignments were a huge hassle as well. I got kicked out of premium seats on KLM flights by the Etihad staff twice. I would avoid this codeshare if possible.

Unless you were in J or F class , I do not think there is any lounge access for a DL member in AUH on a KL marketed EY operated flight

did they give you access?

I was connecting to a KLM flight at AUH, so my onward travel was KLM-operated. The lounge was not an EY lounge but a 3rd party lounge. Yes I got access (and was entitled to access) but it was a huge hassle. Then of course while I was in the lounge I saw online that the AUH based agents moved me out of my preferred seats once again (after I just got them reinstated).
