I have an overnight flight from HKG to NRT in Y+ and want to just skip the meal. Is there any way to do this besides telling the cabin crew on the day?

Not really. Probably quite a few passengers will be in the same boat, hopefully the service pattern will reflect the departure time… minimal disruption after takeoff, maybe a little more activity before landing.
