I'm going to be in a similar situation in Dec - does anyone have any lounge suggestions if you -do- have Platinum status?

CX the Wing or The Pier are a good start. Not sure if the new QF First Lounge will be open by the time you transit, bit if so then may also be worth it if the new QF J Lounge is an indication.
 
And if time is getting a little short, there is no need to get the ferry back across to Hong Kong station. Depending where you are on Kowloon, you can pick up the airport train at Kowloon station,

With your octopus card it's automatic.

Use it at 9am on the Airport express and it will deduct HKD100*. Use it for the return at 2pm the same day and it deducts zip (the HDK100 day return fare).
If you instead use it to go back the next day, another HKD80 will be deducted (the HDK180 return fare).
If you use the AE 5 weeks later and a HKD100 one way fare will be deducted (Return [non-day] tickets have a month validity).

*Assumes travel to/from Central.

The Octopus card is definitely the HK traveller's best friend. Makes travel on bus, train, metro, ferry so simple.

Even accepted in Macdonalds and other places as payment (though anyone who goes to Hong Kong and eats at Macdonalds needs to take a good hard look at themselves!)

And Starbucks, 7-11 etc as well. Its like having cash in your pocket.
