It was more genuine questions why:
1. Juice is a more appropriate drink for a dinner service
2. What makes beer/wine drinks take longer than soda/tea & coffee
3. Is this standard on QFi dinner services? (I've just never seen other full service airlines not offer this for a dinner service).

A dinner service at the end of the flight is not the same as a dinner at the start of the flight. Definitely not standard for main dinner services for afternoon/evening departures.

I'm guessing historic takeup determines if they load booze - I'm fairly certain it's offered on QF104 from HNL, but that's a very different market of pax.

I still think (based on my experiences) a different crew would have got it for you when asked. Think you just got a bad one.

So dinner isn't the same as dinner? Call it supper? Snack? Elevenses? Qantas serves breakfast around noon domestically, so who knows. 🤷‍♂️ Irrespective of what its called, for a meal served at 8pm (EDIT- maybe 6pm?) as I said, I don't think its an unreasonable expectation on a full service airline.

This is one occurrence, let's not start blaming "the system".

The OP said they was told that booze wasn't loaded into the carts; not an individual's refusal to serve. I prefer to blame to system (airline) rather than crew in circumstances like this. I suspect just cost saving on this route, but we don't know.

I think they actually do call it something like that. Refreshment perhaps?

There’s an individual on the crew that’s loading those carts.

Regardless, as I and many others have said, even if it’s not on the carts they will usually go and get it for you, or write down your seat number and bring back later.

So yes, it is ultimately individuals as to why OP didn’t get a drink and why - pretty much the rest of us who have shared our experiences here - have got one on request.

I'm tempted to leave your curiosity unrequited, but ... last year. But how is that relevant, other than a diversion? The thread is about the OP's experience on QF87 and the rest of us are expressing views and opinions.

Because you're blaming a system on a single occurrence. You hadn't shared your experience getting beverages in Y, hence the question. Relevant because we are comparing experiences vs OPs experience, and if you want to blame the system you need more than a single data point.

You're focusing on the carts not being loaded and that's really not the issue, it's that the crew wouldn't get a drink on request. That's the problem IMO. I couldn't care less how they load the carts, that's up to them. Some flights they don't even bring the carts down, they just get the drinks on request (standard practice for a lot of US airlines) as presumably they find that easier. Often even if there is booze loaded they won't have spirits and these will be on request. Yes, I have many many data points on that one!
