Best Airport to transit thru in Europe

OK, here is my question, to all you very knowledgeable people. Which is the best airport to transit thru, on my way to Edinburgh or Newcastle UK. I have transit thru LHR, Frankfurt, and back in the late 80's Amsterdam. I know that EK flys direct to Newcastle and Glasgow.

EY fly to LHR, MAN and DUB only from AUH. They fly to EDI via connecting flight from DUB with Aer Lingus.
