Yes. Seat change is possible through the app after check-in in same way it is before check-in (but with a slightly different user interface). To memory (I could be wrong), you aren't prompted to select/change seat during the app check-in process, but quite easy to do after you are checked-in.

Actually being able to click and load the dates past 353. You have to click from day 353 back to day 352 (eg from 2 Sep to 1 Sep) before it should then let you go forward (to 3 Sep & behind). Only for non-QF metal rewards, as QF do not release anything until 353 days out. Not sure what CI...

Just checked again. If you do a search for 353 days out, then click back to 352 (not entirely sure why this step is needed), you can then click forward to browse the specific availability for the 7 days after day 353. It’s a bit clunky but it works.

As long as QF will let you link the pass to those flights, yes. Sometimes they close off access during peak travel periods due to high demand, so just keep an eye out for that - but if it lets you link, you're good to go.

I can't think of many better ways to spend a week than that. Using it as a base to get to other places as you suggest sounds like a great option.
