For a single woman traveller, what hotels are recommended (I assume any reputable 5 star international chain will be OK) and what about organised city tours to see some of the city during the wait?

Qatar is very safe for women travellers and all hotels will be fine. Mrs Jase has travelled solo through DOH and spent 2 days alone there and said she feels safer walking around at night there than in Adelaide.
QR and Discover Qatar offer transit tours but not sure of costs. If you have booked your flights through QR you may also be eligible for the free transit stay where they will pay for your accommodation.
Otherwise taxis are very cheap in Doha and will get you to wherever you need to go.
We stay a bit out of town in Lusail as the Raffles looks after us amazingly so that is our go to now but in the past we have stayed at different properties and all have been good

What time of day are you there?
I arrive at 4:15 am and leave at 20:25 that evening. And then flying home direct to Adelaide so will probably be able to get some sleep on the plane.

Not great times but from the airport to the City it’s like 10-15 minutes tops and will cost you not a lot. Souq Waqif is a great place to visit and even though it’s best in the evening it’s still a pretty cool place to wander around during the day and you will find all sorts of gifts and trinkets. Check the hours but most restaurants in the Souq are open pretty much all day and not badly priced. Would definitely try to get some sort of short tour if you haven’t been there before as it’s a great way to see the city and fill in some time. I don’t know what your interests are but I find the Museum of Islamic art absolutely superb and easy to spend hours at and I’ve even been back multiple times.
