What happens if you get off the Flight at AMS instead of going through to Copenhagen
you can expect to lose the rest of the ticket.... and stay on in Europe needing to find another way home

the hidden city ticket only works when you bail out at the last stopover (which you desired to do anyway) and didn't fly the FINAL LEG

Yep. With Y and J flights in Europe so cheap if CPH isn’t your final destination you can just pick up a revenue fare
 
In light of the other expensive J fares in the market, treating it as a one way ticket and getting off in AMS might well have been cheaper

I do note there’s a $5533 airfare ex Sydney via Manila (Phillipines airlines) and Dubai (EK to Copenhagen) for the same time period now on the top of the price list for those dates

If you missed the Copenhagen flights, the 20% off SUMMERSPLASH code brings return J flights MEL/SYD to London and Paris on selected dates down to around $5,500, which isn't too bad either.

I can find SYD-VIE for $5,076 too if you play around with dates.

I managed to book this and ticket it. Now waiting to find out whether it is actually going to happen...fingers crossed. Any tips for things to do/see in Copenhagen (actually quite excited about going there even though it is not where I ultimatley want to end up)?
 
Well the obvious thing to do in Copenhagen are things like the Tivoli gardens and the little mermaid and of course Danish open faced sandwiches!

But then denmark is also very close to most other Northern European capitals and fares can be quite reasonable so no reason to limited to just one city.

Maybe a couple of days in Lapland?
 
We flew SAS from Copenhagen to The Faroe Islands in recent years.

An absolute gem of a place to visit - highly recommended. Trip report here -

There’s been a few promo fares to CPH (multiple airlines), but yes easy to get to anywhere in Europe/UK etc. Especially since Denmark can be hideously expensive to visit.
