Hey. We have almost 7 hours between a 6pm landing and 1am departure in HK. Reading previous threads I was pretty much planning on doing this:

"I would get off the airport train at Central; walk round down-town a bit - you might get as far as Hong Kong Park. Then to the Star Ferry Terminal, catch the ferry across to Kowloon. Walk east along the foreshore where the elevated viewing platform is, as far as you want to, then loop back west to Nathan road; and further across to the Ocean terminal / Harbour City malls".

Broadly. Any suggestions about where we might grab dinner in Tsim Sha Tsui (something local) or where to wander before we head to Kowloon station to grab the airport express back to HKIA and our Rome flight?

thx in advance for any suggestions.

Just a warning not to under estimate the heat over your time in HK. I was there recently and it was over 30 degrees. It can take it out of you if you are walking around for a long time.
