I used to used Gear VR Innovator Edition to watch movies in Oculus Cinema whilst in flight.
Oculus added some changes to allow you to reposition the screen as needed. The IMU tends to drift over time during a flight.
The flight attendants tend to just tap you on the shoulder when meal time comes around.
If you're worried, make a small note that you can stick on your body or the outside of the VR gear.

I haven't found a cheap Gear VR for my Note 8, so I haven't used Oculus Cinema in a while. I do have a cheap Daydream, but the tracking quality isn't as good as Gear VR.
Oculus Go and Oculus Quest are good alternatives, and can be had cheaply.

The 3D SBS rips at 1080p are fine, since the horizontal resolution is reduced.
For 2D content, just stick to 720p.
Depends on how much field of view you want to fill up, with cinema content.
If you are watching high-resolution stuff, e.g. 5Kx5K, then it only makes sense for 3D video, e.g. Henry.
