Booking Qatar with Privilege, then changing when Velocity accepted?

I suppose it depends whether it was before or after check in - once checked in, I doubt it can be changed for those flights you have checked in for. And not sure about points being transferred either given one is Avios and the other Velocity, but also, status credits cannot be transferred at all.

Having had the QR Platinum experience (and I still am as they keep extending it!), I decided while their in-air experience is fantastic, their aftersales and phone is soooo bad that I doubt I'll fly them again, simply because when things go wrong they just do not care, despite what they say they will do, in my experience nothing ever happened. And this was a number of issues over different flights. So with that in mind, I would be concerned about what you are being told as I think it unlikely to happen

Either way, I’m a bit sad I’ll lose VA platinum after so many years. It was always a bit of a risk making up the final credits in the last month before review. I haven’t done as much domestic flying this last year.

It’s changeable in the QRapp after check in, did it recently,

That is totally untrue - I changed mine after choosing the seats from Qatar to Virgin, then lost the seat allocation. So had to change it back. So yes it is easy to do.
 
I changed my QR FF number to VA while sitting on the plane waiting to depart BNE for DOH. Which in hindsight wasn't smart as the SC's weren't enough to retain Gold and I missed out on a welcome greeting and special attention on my connecting flight (so my return flights were on the QR FF, which got me enough Avios for a J flight to MEL).
 
Just in case anyone finds themselves in the same boat, while I wasn’t able to change my number from QR to VA at the airport (as mentioned earlier in the thread), I was able to delete my points with Qatar after the flights had been credited by ringing up Qatar. Then I was able to assign them to Velocity after 14 days by showing them my account statement showing the points had been deleted. VA apparently can’t do retrospective claims earlier than 14 days after the flights are taken. So I suppose I benefited from QR status during flight and then also got to retain VA platinum. I wouldn’t recommend this method though - it was quite time consuming.
