I hate it when wait staff at restaurants refer to us as guys! I’m paying so they can call me madam.
And that should still be the case. I find that I'm referred to as "Sir" most times but at the more casual eateries that may not always be the case.
 
At our Thai restaurant I was always known as Papa Doc.Mrsdrron was Madame.

They're misjudging their market if they're referring to "sir" and "madam" customers as "guys".
I on the other hand find it uncomfortable/embarrassing being referred-to as "sir", including places like The Fat Duck or Waku Ghin; do I really look that crusty?!
 
Come to Tasmania. Its "yous" here. "Are yous ready for the bill". "Did yous enjoy your meal". I'd quite welcome a "sir" or "madam"!

Depends on the environment. I'm thinking in the context of the comment you quoted, Madam is a title, therefore a proper noun, therefore capitalised; as you have done. The original quote is not capitalised, hence one could conclude that it is actually a job description... :)
 
This thread has gone so far OT that I struggle to remember what it was about! I think it is kept alive as it has such a great title :)

In the restaurants we visit, guys just doesn't cut it. Even in casual restaurants I find it annoying. Interesting the sub-par staff at Rick Steins at Mollymook called us guys!
Mr LtL seems to get Sir Phillip on our cruises - not sure why but not limited to just one ship; had the same thing on 4 or 5 cruises now, including the Ponant one just gone.

Oh, Rick Stein has been attempting to be 'funkier' in his more recent incarnations. Not that he pays particularly close attention to his business interests much these days. He's been just a label over a door for ages, like Neil Perry. Personally I can't stand Rick. But I yes, he does know how to cook.
 
Mrsdrron is Madame-not a Madam.Certainly on Silversea where TKWIA I am often referred to as Sir Ron.

Actually the food was decidedly ordinary and it was a few years back when Mollymook was still pretty new as his restaurant.
