I was wondering what plans Qantas have in place to upgrade the seats in Business Class on the Sydney - Honolulu sector ?....As in those comfy dreamtime seats ?

Qantas currently operates Boeing 747-338 aircraft on the QF3/4 SYD-HNL-SYD routes. These have all be upgraded to dreamtime seats on business class. There is no plan announced to replace these with Skybed seat as they have with the 747-400 and A330-300 aircraft.

To concur with NM's explanation, here is the current Skybed Roll-Out Schedule. No SYD/HNL showing, so doesn't look like anytime in the foreseeable future.
