I did a quick search but nothing really came up (this one was close, but not quite my situation).

I'm flying out of SIN with SQ in a few months on one of the post-midnight flights, and was thinking of getting to the airport early for dinner and a bit of shopping at Jewel.

I was wondering if it would be possible to check in most of my bags when I got there (using the Jewel Early Check In facility), leaving one 'less full' bag that I could keep with me to store anything I bought while shopping? I would check in that final bag a couple of hours later once I was finished shopping.

I was wanting to check some of my bags in prior to shopping to avoid the following scenarios:
1. Not checking any bags in prior to shopping: Having to wheel around all of my bags with me while shopping; or
2. Checking all of my bags in prior to shopping: Being constrained in the amount of stuff I could buy by what I could fit in my carry-on

I imagine that by the time I finished shopping, the ECI feature would no longer be available to me (it stops 3 hours prior to departure), and I would need to go to the counters to check in my final bag.

If I understand you correctly, you want to check in multiple bags at different times; this is different to the title of your post: "check in bags multiple times".

I only have experience with QF and VA: I have done this many times, as recently as a few weeks ago. You initially check in your first set of bags, and later in the day you check in the remaining bags. This should not be an issue as long as you are within your baggage allowance.

Yes, they should just give you a new bag receipt with the extra item.

There is staff at the early checkin area - it would be interesting to hear what they say if you told them the extra bag would be checked in later (but still > 3 hrs?). ie is that possible?

Yep, I worded my title poorly - you have described what I want to do more accurately.
