Thanks to everyone who has given me ideas thus far... We have locked in a few of the aforementioned suggestions thanks to the recommendations from AFFers. Has anybody got any must-do restaurant/dining suggestions for the following cities? San Diego - NYC - Vegas - San Fran (Gary Danko is on the list, thanks JohnM!)

About 10 years ago I dined at the restaurant out on the point on the city side of the harbour. Pretty sure it was: The Fish Market Seafood Restaurants serving San Diego, Palo Alto, Del Mar, San Mateo, Santa Clara, San Jose. Note that the upper floor is the the more upmarket section.

The thing that I really remember was the incredible selection of oysters by species/variety/named locality of origin. IIRC, there were about 12 on offer and I asked the waiter to advise on 3 each of 4 different ones. It was amazing tasting the differences in flavour and texture.

For NYC, Rouge Tomate: Rouge Tomate | Michelin-starred, Healthy & Sustainable NYC Restaurant is sensational and in a great location just off the corner of Central Park where the horse-drawn carriages area is.

Others may suggest Per Se, which I have not tried, but of course has a huge reputation (Thomas Keller of French Laundry fame) - and huge prices also, no doubt. Rouge Tomate was not not outrageous.
