Heading to Sydney with a mate for the NRL grand final. We fly in around 7.30pm and then checking in to one of the airport hotels for the night before going to the game the next day.
My question is, can I just wander back over to the terminal after checking into the hotel and gain access to the Lounge for an hour or so for a beer and a bite even though I don't have a BP for onward travel? And can I guest my friend with anytime access?

Yes you can subject to capacity issues however I dont believe it includes guesting privileges.
 
My understanding is (well was) that whenever a Gold member enters the lounge, they can take one guest with them (regardless of their "type" of entry - be it pre-flight, post-flight or "anytime"). This was confirmed to me by Virgin Australia in a PM (unless I misunderstood).
 
I've used arrivals access in SYD before with a guest and they let me bring him in. Not quite "any time" but they didn't even ask for proof we'd come off a flight.

I then settled down after realizing it related to VA ;)
 
I used anytime access over the weekend, took in a guest no problem. Not sure if it's a goodwill gesture or not.

Slightly OT:

In the Mel lounge on Sunday night with two guests, explained to the Lounge agent that I have a guest pass for the extra guest, she just waived me through saying I've got until January to use it, and save it for another time.

A very nice gesture as it was 6pm and she couldn't get me me on the earlier flight home.... Didn't leave the lounge until 2300ish
 
Ive used it with a guest as well, I nor the guest were not even travelling that day, was at the airport (BNE) to pickup an asian tour leader, and thought I would see how I went. No problems at alll
