Realistically as someone that has lived in Nagoya before, there really isn't much to do in the city that you can't do in other major cities except maybe the Toyota museum. It's a good base camp to go day tripping out into central Japan but if you already plan on heading out that way, I'd only realistically stop long enough in Nagoya for the food.
Miso Katsu and their Chicken wings are still among my favourite food in all of Japan.
I would however suggesting to get a international driver's permit and look at renting a car once you're out near Takayama if you want to explore beyond the town. While there are public transport out there, its quite limiting and a car will grant a lot more flexibility in your schedule.
