An aircraft can have a 25 year old airframe but be pretty on the inside.
Just because a plane has nice new seat covers doesn't make it any newer mechanically - not that the average punter would have a clue.

I believe this former QF bird is very pretty on the inside despite hitting 25.

Maybe so, however as you say it is a former QF bird not a current one so the fleet age of a former bird is not relevant of the age of the birds who currently fly to/from HNL as QF3 & QF4.
The only downside I see to the J refurb is that there aren't seat back holders for the iPads.

I'm sorry I'm confused. You say that there are not any seat back holders for the ipad. Is this opposed to the one hanging from the back of the headrest. Or do you mean a more fixed type bracket so the ipad doesn't need to be stashed in the seat pocket.

The very flimsy magnetic lids that come with recent iPads just wont do the job.
All of the seats in the 767 that have been given iPads have a new seat cover that includes a leather hook into which the Qantas iPad (or indeed any other 'decent' tablet case)..
By decent I mean something that properly attaches to the unit (normally a full back and side cover) that is sturdily connected to the lid.

Well... I believe many would say, "Too bad, so sad." Call it bad fate if you will.
I guess they could swap out a A330 from say domestic ops and put it here (they'd need the crew as such, though). Or even swap it out from, say, MNL.
Main thing for now is that they somehow still fill that plane anyway. And my guess would be if numbers fell dramatically, the answer would not be improve the product, but withdraw.
