If you're in the north at some point i highly recommend Tamar Ridge, Pipers Brook (And Janz as they're 100m apart), Josef Chromy, Bay of Fires (House of Arras) and my personal favourites Goaty Hill and Holm Oak.
Rebecca Duffy (Holm Oak) and her husband have done amazing things for the Tasmanian wine industry and Rebecca was recently named female winemaker of the year and is the direction of Wine Tasmania.
Tasmania's Sparkling is the best in the world and a huge part of that is the work done by Andrew Pirie who is australis first person to obtain a Doctorate in Viticulture. If you get a chance to check out his new project Apogee i highly recommend it.
