Was just looking at booking some hotels for a trip to Greece next year and almost every single Hilton appears to be sold out from October onwards and for the all of next year.

Is this a known practice that Hilton opens bookings 6 months in advance for some hotels?

Usually that means hotels coming in or coming off contract, or suspended for lease renegotiations (as we saw with Hilton Brisbane recently).

The HGI in Athens looks nice and is available, I'm staying there next month.

Tnere are some Hiltons in Europe that hold back opening bookings until about 8 months out. Happened in Paris and Lille this year at ones I was looking at

Is that a thing in Greece? They don’t really get winters.
On the islands in particular many hotels do close for the winter. It's not cold by European standards but certainly not warm enough to be outside sipping coughtails, partying by the pool etc.

Average max/mins in Athens in Jan/Feb not really much different to Melbourne in Jul/Aug, albeit with less rain and probably less variability and slightly warmer nights. The islands are little warmer, but don't think they'd be as warm as a Sydney winter. (but of course outside of winter Athens is much much warmer than Melbourne)

Also you look at flights, just from London as an example in late July there are about 8/day to Corfu, 4-5/day to Santorini and 3-4/day to Mykonos. Come late November that goes down to ~5-6/week to Corfu and Santorini and none to Mykonos. That's an awful lot of hotel rooms that are needed in summer, that aren't in winter.

BTW Comparing Athens and Melbourne:
