First thing when you arrive at the station is to buy a ticket. If you are buying more than 1 ticket, always use the counter. The machines don't give you any discounts, but the counter will have discounts available for more than 1 ticket. After you have bought your ticket, you can proceed to check-in area - the gate is somewhat similar to taking a train - stick your ticket in, and walk through. Usually, there aren't any queues, and the longest queue I've been in was about 3 people. After check-in, you can take the train any time you want, although I would suggest a minimum of 2 hours before departure as HKG can get a little bit busy sometimes.

If you are flying CX you can buy cheaper onboard before arriving.

i used this a few weeks ago and it was very good. I was flying Jetstar back to Singapore and I think they had staff that covered quite a few airlines, as Jetstar doesn't have a lot of flights coming out of Hong Kong.
 
I was in Hong Kong last week, and would recommend check-in via the train station.

The check-in at the airport (for QF) was total utter shambles, complete chaos. Over 1 hour to check in, whilst in the J que/line, and l wasn't the only one who was slightly pi$$ed.....then there was immigration stamp time, another 30+ minutes, really, really unorganised.
 
I have a one way ticket from HKG to MEL and there is a requirement to see the CC at checkin. I wonder if that can be done at Central or Kowloon?

Pretty sure it is. I've had many ex hkg tix and have used city check-in. Can't guarantee it will work of course though.

Another option is having the CC sighted at the QF HKG office <5 min undercover walk from the Central - Jardine House, marked as A on the linked google map Google Maps

We did this in Oct as we were flying in from NRT & wanted to ensure the bags were tagged all the way through from NRT -HKG-SYD-BNE without hassle. No easy task as it combined 1 paid CX, 1 classic award CX & 1 JASA QF - all on different PNR's.
