+2 for the Four Seasons which is one of the very best hotels I have ever stayed in.
If you want to stay on the island it's ideally located - adjacent to a large mall with lots of eateries and a supermarket, above the train station to the airport, a 3 minute walk to the ferries to Kowloon, a short walk through the mall to the metro rail station and a 10 minute walk to the Macau ferries.
The standard rooms are generously sized (especially for HKG) and the pool has marvelous views of the city and towards Kowloon. If you can get an option with breakfast they do a nice western and asian optioned breakfast buffet.
