How well do you trust VPN's? -[ACCC takes Onavo to court]

Does anyone have any suggestions for the best way to encrypt an external hard drive. There seem to be lots of products out there but not sure which one to choose

As Daver6 says above, Windows and BitLocker with recovery key on USB stick or on the cloud is an easy and excellent solution. There are many commercial and shareware solutions but some of these have proven to be problematic in recovering data.

Another solution which I use as a backup for my Surface is the Samsung T5/7 etc SSD external drives which have their own encryption system, although some reports say it can be cracked, but probably not really a worry.

Last time I travelled I used my "mango" they are great little devices.
powerful enough to run my entire home network with ~40 devices with a USB 4G dongle connected to it. I had to do this when my NBN was down.

can run VPN, can run an ad-blocker
can run the device on a standard USB power bank.
can re-transmit hotel/airbnb wifi. handy when maybe only 1 device is allowed but you have more devices

I literally just had a AR750 slate delivered yesterday. A bit dearer but a bit more powerful. A few of the models are actually on sale at the moment here Amazon.com.au : gl.inet

I've only just started playing with it, but not been able to get the TOR routing working. It just gets stuck on "Initiliazation tor configuration". You managed to get that working?

No haven't looked at TOR at all.
Been using AdBlock and VPN with TORGuard VPN.
