We fly into Singapore on the 1st of Nov, leave 21st. We were going to leave Singapore on the 2nd and go to Laos, however I'm thinking of trying some thing else, maybe 1 week Ho Chi Minh to Phnom Penh by river boat, then go up to Luang Prabang and the north for the rest, returning from LP to Singapore..

The cruises are so difficult for me to pick one, so I'm after suggestions as to what to look for, thanks in advance.

We are doing a Viking Mekong/Cambodia cruise next August (25). Gets rave reviews. Starts in Hanoi, fly to Cambodia then embark on the boat through to Ho Chi Minh.
 
Not sure if you are locked into a "cruise" but I believe it is still possible to do hops using road & then various ferry/boat sections. In 2004 we travelled via Chau Doc having caught a ferry from Phnom Penh and it was a great look at life on the river
