How long do you have to wait until they let know know you are entitled to one? I've reached > 500SC almost two weeks ago and no email...

Yes >500 same year on QF only

I've had two this year, the notification pops up over your SC wheel. You make the selection in the "Your Profile" page. The emails showed up a few days after the flights posted to get me to the 500 mark

What does it say under "Additional Status Information"? It should tell you how many SCs you need for the bonus.
